Quinoa Curry Bowl
Today I am sharing a recipe from Straight Up Food. This is a simple meal made with whole food ingredients that is super satisfying and very easy to throw together. An added bonus is that it is meat-free but loaded with plant-based protein. I usually always have these ingredients on hand so it has become a staple recipe in my house.
I made this last week and I experimented cooking the quinoa with a small strip of Kombu. Kombu is a sea vegetable from the kelp family. It is rich in calcium, iron, and magnesium. It is also very high in iodine. Iodine is an essential trace element that is required for hormone production and normal thyroid function.
To use this sea vegetable and amp up the nutrient profile of this meal, simply place a small strip of Kombu (about 3-4 inches) into the water with the quinoa. Cook the quinoa as directed and remove the strip of Kombu when all the water has been absorbed. Prepare the rest of the dish as instructed. Give it a try - it is absolutely delicious!

Ingredients:
1½ cups water
¾ cup quinoa (dry)
strip of kombu (optional)
1 teaspoon granulated onion
½ teaspoon curry powder
1 bag (16 ounces) of frozen "stir fry" blend vegetables
1 tablespoon minced garlic (4 to 5 medium cloves)
1 teaspoon minced fresh ginger
1 teaspoon curry powder
2 tablespoons tahini (ground sesame paste)
½ avocado (optional)
sesame seeds to garnish (optional)
